Ingredients

For the Shrimp:

  • 1 pound large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 2 tablespoons olive oil
  • Zest and juice of 1 large lemon
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

For the Quinoa:

  • 1 cup quinoa, rinsed
  • 2 cups vegetable or chicken broth (or water)
  • Salt, to taste

Instructions

Prepare the Quinoa:

  1. In a medium saucepan, bring the broth (or water) to a boil. Add the rinsed quinoa and a pinch of salt.
  2. Reduce heat to low, cover, and simmer for about 15 minutes, or until the quinoa is fluffy and all the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.

Cook the Shrimp:

  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sauté for about 1 minute until fragrant (be careful not to burn the garlic).
  2. Add the shrimp to the skillet, seasoning with salt and pepper. Cook for 2-3 minutes on each side until the shrimp are pink and opaque.
  3. Stir in the lemon zest and juice, mixing well to coat the shrimp. Cook for an additional minute.

Combine and Serve:

  1. Serve the zesty lemon garlic shrimp over a bed of quinoa. Garnish with fresh parsley and additional lemon wedges if desired.
